Layers of slow-cooked beef ragù, white sauce and cheese, baked until bubbling. Feeds six and takes the better part of two hours.
Ingredients
- 1 kg beef mince
- 250 g lasagne sheets
- 2 × 400 g tinned chopped tomatoes
- 2 Tbsp tomato paste
- 1 each onion, carrot and celery, finely diced
- 4 garlic cloves
- 1 L milk for white sauce
- 60 g each flour and butter for white sauce
- 300 g cheddar and mozzarella, grated
- to taste oregano, bay, salt and pepper
Method

Brown the mince in batches, then soften the onion, carrot, celery and garlic in the same pot.

Add tomatoes, paste, herbs and a cup of water; simmer 40 minutes until thick.

Make the white sauce: melt butter, stir in flour, whisk in milk gradually and cook until it coats a spoon.

Layer ragù, sheets, white sauce and cheese in a deep dish, finishing with cheese.

Bake at 180 °C for 40 minutes until golden. Rest 10 minutes before cutting.
