Griddled chicken over crisp cos lettuce with parmesan, homemade croutons and a proper anchovy dressing. A light meal that still uses three pans.
Ingredients
- 4 chicken breasts
- 2 heads cos lettuce
- 100 g parmesan, shaved
- half a loaf ciabatta for croutons
- for 4 mayonnaise, anchovies, lemon, garlic and mustard for dressing
- 4 Tbsp olive oil
Method

Tear the ciabatta, toss in oil and salt and bake at 200 °C for 10 minutes until golden.

Season the chicken and griddle 5–6 minutes a side; rest and slice.

Mash the anchovies and garlic, whisk into the mayonnaise with lemon juice and mustard; loosen with water.

Toss the lettuce with the dressing, top with chicken, croutons and parmesan shavings.
