Oven-crisped wings tossed in a honey-hot-sauce glaze, with blue cheese dip and celery. Great for the game — messy for the kitchen.
Ingredients
- 1.5 kg chicken wings
- 3 Tbsp + 1 tsp cornflour and baking powder
- 125 ml + 60 g hot sauce and butter
- 3 Tbsp + 2 Tbsp + 3 cloves honey, soy sauce and garlic
- 100 g + 125 ml blue cheese and sour cream for dip
- 1 bunch celery sticks
- to taste salt, pepper and paprika
Method

Pat the wings dry and toss with cornflour, baking powder, salt and paprika.

Roast on a rack at 220 °C for 40 minutes, turning once, until crisp.

Melt the butter with hot sauce, honey, soy and garlic; simmer 2 minutes.

Toss the hot wings in the glaze until coated and sticky.

Mash the blue cheese into the sour cream for the dip. Serve with celery.
