Rosemary-and-garlic lamb loin chops with crispy baby potatoes and green beans. Simple, but good lamb is never cheap at the till.
Ingredients
- 1 kg lamb loin chops
- 800 g baby potatoes
- 300 g green beans, trimmed
- 4 + 4 cloves rosemary sprigs and garlic
- 3 Tbsp + 30 g olive oil and butter
- 1 lemon
- to taste salt and black pepper
Method

Rub the chops with oil, crushed garlic, chopped rosemary, salt and pepper. Rest 20 minutes at room temperature.

Halve the baby potatoes, toss in oil and salt and roast at 220 °C for 25 minutes until crisp.

Blanch the beans 3 minutes, drain and toss in butter and lemon zest.

Grill or pan-sear the chops over high heat 3–4 minutes a side for pink; rest 5 minutes.

Serve with the potatoes and beans and a squeeze of lemon.
