Ingredients
- 700 g chicken thighs or breasts
- 2 tbsp oil
- 1 large onion, chopped
- 4 carrots, sliced
- 4 celery stalks, sliced
- 4 garlic cloves, minced
- 2 tsp fresh ginger, grated
- 1 tbsp fresh rosemary (or 1 tsp dried)
- 1 tbsp fresh thyme (or 1 tsp dried)
- 1 tsp turmeric
- Salt & pepper to taste
- 1.5 L chicken stock
- 2 bay leaves
Method

Brown the chicken in oil, 3-5 minutes a side. Remove and set aside.

Saute the onion, carrots, celery, garlic and ginger for 10 minutes.

Add rosemary, thyme, turmeric, salt and pepper. Cook 2-3 minutes.

Return the chicken to the pot, add the stock and bay leaves. Boil for 5 minutes, then simmer for 30 minutes.

Remove the chicken from the pot and shred it.

Return the shredded chicken to the pot and simmer a few more minutes.

Serve hot with a slice of your favourite bread.
