Ingredients
- Syrup: 4 cups sugar, 2 cups water, 1 tsp ginger, juice of ½ lemon
- Dough: 4 cups flour, 4 tsp baking powder, ½ tsp salt, 60g butter, 1 egg, 250ml milk
- Oil for deep-frying
Method

Boil syrup ingredients 5 minutes, then chill overnight (must be very cold).

Rub butter into flour, baking powder and salt. Whisk egg and milk, mix into a soft dough. Rest 1 hour.

Roll 5mm thick, cut into 6x2cm strips, slit each twice and plait.

Fry at 180°C until golden.

Straight from the oil, plunge into the icy syrup for 30 seconds. Lift onto a rack.
