A Kwai Lekr favourite — buttery golden-syrup oat and coconut squares baked till golden, cut warm and cooled crisp. Proper South African tea-time crunchies.
Ingredients
- 2 cups (about 180g) rolled oats
- 1 cup (125g) cake flour (or all-purpose flour)
- 1 cup (200g) white sugar (or half white, half brown sugar for a richer taste)
- 1 cup (100g) desiccated coconut
- 125g (about 1/2 cup) butter
- 2 tablespoons golden syrup (or honey)
- 1 teaspoon baking soda
- 2 tablespoons milk (or water)
Method

Preheat the oven to 180C (350F).

In a large bowl, mix the oats, flour, sugar and coconut.

In a pot, melt the butter and golden syrup together over low heat.

Mix the baking soda with the milk, then add it to the melted butter mixture - it will foam up.

Pour the foamy mixture over the dry ingredients and mix well until combined.

Press the mixture evenly into a greased baking tray (about 20x20cm). Flatten well.

Bake for 20 to 25 minutes, until golden brown.

While still warm, cut into squares or rectangles. Let them cool completely in the pan before removing.
