Ingredients

  • 2 cups (about 180g) rolled oats
  • 1 cup (125g) cake flour (or all-purpose flour)
  • 1 cup (200g) white sugar (or half white, half brown sugar for a richer taste)
  • 1 cup (100g) desiccated coconut
  • 125g (about 1/2 cup) butter
  • 2 tablespoons golden syrup (or honey)
  • 1 teaspoon baking soda
  • 2 tablespoons milk (or water)

Method

  1. 1

Preheat the oven to 180C (350F).

  2. 2

In a large bowl, mix the oats, flour, sugar and coconut.

  3. 3

In a pot, melt the butter and golden syrup together over low heat.

  4. 4

Mix the baking soda with the milk, then add it to the melted butter mixture - it will foam up.

  5. 5

Pour the foamy mixture over the dry ingredients and mix well until combined.

  6. 6

Press the mixture evenly into a greased baking tray (about 20x20cm). Flatten well.

  7. 7

Bake for 20 to 25 minutes, until golden brown.

  8. 8

While still warm, cut into squares or rectangles. Let them cool completely in the pan before removing.
