Sticky Braai Pork Ribs

Slow-baked then flame-finished pork ribs in a sticky homemade basting, with chips and slaw. Worth it — but it takes an afternoon.

Ingredients

  • 1.5 kg pork loin ribs
  • 1 cup total tomato sauce, brown sugar, soy and Worcestershire for basting
  • 1 kg potatoes for chips
  • 500 ml sunflower oil
  • for 4 cabbage, carrot and mayo for slaw
  • to taste paprika, garlic powder, salt and pepper

Method

    Rub the ribs with paprika, garlic powder, salt and pepper. Wrap tightly in foil.

    Bake at 160 °C for 75 minutes until tender.

    Simmer the basting ingredients 5 minutes until glossy and thick.

    Finish the ribs over medium coals or a hot grill, basting and turning until sticky and charred at the edges.

    Fry the chips until golden; mix the slaw.

    Slice between the bones and serve with extra basting on the side.
