Ingredients
- 500g bread flour
- 7g instant yeast
- 10g salt
- 320ml warm water
- 2 tbsp olive oil
- 1 cup tomato passata
- 1 tsp dried origanum
- 250g mozzarella, torn
- Handful rocket
- Shaved biltong or salami
- Salt and black pepper
Method

Mix flour, yeast and salt. Add water and oil and knead 8 minutes until smooth. Prove 1 hour until doubled.

Heat your oven, pizza stone or covered braai as hot as it will go (250C+).

Season the passata with origanum, salt and pepper.

Stretch the dough thin, spread a thin layer of sauce and scatter the mozzarella.

Bake 6-8 minutes until the crust is blistered and charred in spots.

Finish with rocket, biltong or salami and a drizzle of olive oil. Slice and serve immediately.
